Test Flight: Granola

We’re starting out with granola.

I wanted to test out my food photography, blog writing, and recipe writing skills, and what better way to do this than with one of my favorite foods. It is beautiful, multi-textured and has everything a person could want or need in a food. Everything is not quite true, but “lots” is- lots of yummy fats and proteins from the nuts, good old fiber from the oats, I bet even some antioxidants from the dried fruits and seeds. But enough about the health benefits- they’re not the real reason I like granola.

Granola is a reminder of my past homes. I had it almost without fail every morning at boarding school (shout out to Bearcat granola and Chef Cox). It is also a food I experimented a lot with as a teenager in my parent’s home. Whenever I have the good stuff I’m transported back. The inaugural dish is a home for me, framing my endeavors with this blog quite well.

It is also just delicious, the kind of food that speaks to the soul, and makes one more settled, peaceful, and joyful after just one bite. Don’t you want some?

Ingredients

3 cups of rolled oats

1.5 cups of pumpkin seeds

1 cup of almonds

1/4 cup of honey

1/4 cup of melted coconut oil

1/2 cup of raisins

1 tablespoon of spices, like cinnamon and ginger

 

Instructions:

Making this recipe is super easy. In one large mixing bowl, add in the oats, then the nuts and seeds. Next add in your spices. Mix the two wet ingredients- the honey and coconut oil- together before adding to the large bowl. I personally like my raisins a little toasty, but if you’re not a fan of having your dried fruit a little burnt, don’t add them until after the granola has cooked in the oven.

Pour the granola out onto a cookie sheet (or whatever flat sheet that you happen to have) and bake for 15 minutes. It’s tempting, but after it bakes let it sit for 15 more. You will be rewarded.

As a general note- this granola is all about the essence! If you want to veer of track a bit- doubling the ginger (always a fan of more ginger), adding dried apricots instead of raisins or just no dried fruit at all- have fun and more power to you! I’m glad you’re feeling confident about your granola making.
